A New Tradition - It's Called PANCAKE DAY! :)

Okay, so first of all I just want to note how incredibly weird the weather in Ireland is!! I don't understand how it can be cloudy and cold for days and then the one day it's sunny out it rains. I mean, what the heck is with that! You expect the rain to come on the cloudy days and then it totally catches you off guard. Oh well, what's a girl to do??

Anyways, I have decided that I am bringing a new tradition home with me. Yep, it's called Pancake Day!! Okay so at home we have a huge Mardi Gras hoopla and then also Fat Tuesday where you just get to veg out right before Lent, right.. Well, here they have a whole day devoted to Pancakes! Which is pretty much my favorite breakfast food (besides Waffles... unless they're chocolate chip pancakes, in which case they are definitely my favorite).  Today, I woke up, made some (American) pancakes, went to class, went to IONA and ate some Crepes (which they call pancakes here), and for dinner.. I think I will treat myself to more pancakes. What a great day! So, I have decided from this year forth, I shall eat Pancakes all day on the Tuesday before Ash Wednesday! I'm so excited!!! Just thought I'd share.
